This is a Win

As yesterday was Mother's Day, it's the perfect time to make muffins. I had a new recipe I wanted to try, Oatmeal Apple Cinnamon. This used up the buttermilk and the safflower oil I had on hand. I'm not sure that I will be replacing the safflower oil. It's got a stronger flavor than I like in baked goods. I think I'll keep canola oil on hand for those recipes calling for it or safflower or corn. I only have buttermilk in the house when I'm baking and I don't have anything in the "try" pile that requires it.

These have whole wheat flour and raisins in them. Unlike the last muffin experiment, the batter looked like it was supposed to. The recipe says it makes a dozen but, if you've read this space for any length of time, you know that never happens to me. I got 18.


They came out very well. My only criticism is that they crumbled a bit too quickly when eaten. I went onto the deck to pull in the rugs I'd washed and the muffin I was eating disintegrated into about 4 pieces. I froze most of them so we will see how they stand up to freezing and thawing.

Now to clean up the kitchen.
